I am an avocado lover. But to be honest, I’d never imagine that one day was going to use avocados to make something sweet. I was a bit skeptical to add avocados to my sweets combine recipes so I decide to add another of my favorite ingredients: Pistachios {{yum yum yum}}. Let me tell you: It turned out delicious!!

My little boy, who is a really a super picky eater, loved too. Of course, I did not mention that they were made out of avocado. I have tried for months that he, at least, eat a tiny piece of avocado. Big fail. As soon he sees it he starts gaging… but this time around he did not even notice it {happy dance}.
I think I’ll keep doing unexpected paletas (ice pops) combinations of vegetables and fruits throughout the summer.
Well… whatever it takes to get vitamins and nutrients into my children.

Avocados & Pistachios Paletas {Ice Pops}
Ingredients
- 2 ripe avocados, cut half lengthwise
- 1 1/2 cups pistachios, finely chopped
- 2 cups half and half
- 1 cup almond milk
- 1 can (14oz) sweetened condensed milk
Instructions
- In a blender, blend avocados, pistachios, half and half and almond milk on low speed until ingredients have completely combined.
- Divide the mixture among the molds, snap on the lid and freeze for at least 4 hours or until completely frozen.
- To unmold the ice pops, run them under lukewarm water for 10 seconds then slide them from the molds.
