French toast has always been a favorite for breakfast, but when you have an egg allergy or intolerance, or you simply don’t consume eggs, this classic dish it’s unthinkable. Well…no more! This BEST Eggless French Toast recipe is a game-changer for people who cannot, or do not, consume eggs.

To mimic the “eggy” flavor and texture you will need three ingredients: cornstarch, black salt or Kala namak, and nutritional yeast.

And NO…these eggless French toast will not taste cheesy or weird. The nutritional yeast and black salt can be found in most natural food stores or online.

These egg-free French toasts are fluffy on the inside and lightly crisp and golden on the outside. These are sooo good that you will actually want to drag yourself out of bed in the morning just to eat them. Perfect breakfast, or breakfast-for-dinner, for family and guests.

  • Milk: For cooking and baking, I like to use whole milk. However, you can use any milk you have handy.
  • Cornstarch: This ingredient will help to thicken the mixture and create the “custard”.
  • Spices: I add ground cinnamon and ground nutmeg. These will boost the flavor of your French Toast. A sprinkle of pumpkin pie spice or gingerbread spice also tastes great during the holidays.
  • Sugar: Regular white granulated sugar o caster sugar.
  • Black salt: I only use it to add the “eggy” taste to the custard. You can omit it or substitute it for regular salt.
  • Nutritional yeast: In this recipe, the nutritional yeast will add a rich touch of flavor. If not available, you can substitute for 1 more tablespoon of cornstarch.
  • Vanilla Extract: For optimal flavor, reach for pure vanilla instead of imitation. Even better, try homemade vanilla extract!
  • Butter — The butter is used to fry the french toast. This gives it a crisp exterior, as well as a rich, buttery flavor. You can use salted or unsalted butter.
  • Bread — The perfect French toast really starts with the bread. I like to use a thick and soft variety such as eggless brioche because it gets extra crispy on the outsides while remaining tender and flavorful inside. You can use sandwich bread, but you won’t get the same flavor. Thick slices work best.
  • For serving: Confectioner’s sugar, pure maple syrup, and/or fresh berries.

1 – Make the Mixture

Mix milk, cornstarch, cinnamon, sugar, black salt, nutritional yeast, and vanilla in a shallow baking dish.

2 – Dip the Bread

Dip bread in egg mixture, turning to coat both sides evenly.

3 – Fry the Bread

Heat 2 tablespoons butter in a skillet over medium heat. Fry the bread slices until golden brown, 3 – 4 minutes per side. Wipe skillet, and repeat with remaining butter, and bread.

Pro Tip: If you’re making breakfast for a crowd and have to make multiple batches of French toast, keep them warm in the oven. Simply preheat the oven to 250º F. Then, place a wired rack on a baking sheet and place the fried French toast on the rack; place it in the oven while cooking the remaining bread. It keeps the bread warm and crispy, without drying it out.

4 – Serve and Add Toppings

Dust with confectioner’s sugar, if desired, and serve warm with pure maple syrup and fresh berries.

  • Chocolate: Add 1 tablespoon of cocoa powder to the dipping mixture.
  • Gingerbread: Substitute cinnamon for the gingerbread spice mix.
  • Coconut: Use coconut milk instead of regular milk.

Black salt or Kala namak is a type of rock salt, a salty and pungent-smelling condiment used in South Asia. Although it is called black salt, its color is not black; it has a purple-ish to pink-ish color. Due to its sulfur content, it tastes and smells like hard-boiled egg yolks. This salt is used in many vegan/eggless recipes to mimic the flavor of the eggs. Keep in mind, Black salt or Kala namak is salt, so use it in moderation. I only use it to add the “eggy” taste to some eggless recipes, not as a salt substitute.

What Is Nutritional Yeast?

Nutritional yeast is a deactivated yeast that comes in flakes or as a yellow powder and can be found in most natural food stores. Due to its strong flavor, which is described as nutty, cheesy, or creamy, the nutritional yeast has often been used as an ingredient in cheese substitutes. In addition, it is often used by vegans in place of cheese.

Storing & Freezing Instructions

I love making extra of this eggless French toast so I can enjoy it throughout the week! Here’s how to store it.

Leftovers

Since this recipe does not have eggs, they last a little more than the traditional egg version.  To store French toast, let them cool completely, then wrap them with aluminum foil to keep moisture. Refrigerate for up to 3 days or freeze for 2 months.

Make and fry the egg-free French toast as directed in the recipe. Let them cool completely. Wrap fried toasts with aluminum foil and refrigerate for up to 3 days. When ready to serve, preheat the oven to 350º F.  Place a wire rack on a baking sheet and place the French toast on the rack; bake for 10 -15 minutes, until heated through.

Freezer

To freeze French toast let them cool completely, then wrap them with aluminum foil to keep moisture. I like to wrap them individually so I can pull out just what I want to reheat at a time. Transfer wrapped toasts to a resealable freezer bag. Freeze for 2 months.

Reheating

Frozen French toast can be reheated directly from the freezer. OVEN: Preheat oven to 350°F. Place a wire rack on a baking sheet and place the frozen French toast on the rack; place in the oven and bake for 10 – 15 minutes, flipping once about halfway through baking. MICROWAVE: Reheat the French toast for 2 minutes on high, but they will not be as crisp coming out of the microwave as they would from the oven.

  • 1 cup (240 ml) milk (240 ml) (I use whole milk)
  • 1/3 cup (50 g) cornstarch
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 3 tablespoons (36 g) granulated sugar
  • ¼ teaspoon black salt (see notes for substitute)
  • 1 tablespoon nutritional yeast (see notes for substitute)
  • 2 teaspoons pure vanilla extract
  • 4 – 6 tablespoons (56 – 84 g) unsalted butter
  • 6 slices eggless bread (thick slices, approx.1-inch)
  • Confectioner’s sugar (powdered sugar), for dusting (optional)
  • Pure maple syrup, for serving (optional)
  • Fresh berries, for serving (optional)
