To mimic the “eggy” flavor and texture you will need three ingredients: cornstarch, black salt or Kala namak, and nutritional yeast.

And NO…these eggless French toast will not taste cheesy or weird. The nutritional yeast and black salt can be found in most natural food stores or online.

These egg-free French toasts are fluffy on the inside and lightly crisp and golden on the outside. These are sooo good that you will actually want to drag yourself out of bed in the morning just to eat them. Perfect breakfast, or breakfast-for-dinner, for family and guests.

  • Milk: For cooking and baking, I like to use whole milk. However, you can use any milk you have handy.
  • Cornstarch: This ingredient will help to thicken the mixture and create the “custard”.
  • Spices: I add ground cinnamon and ground nutmeg. These will boost the flavor of your French Toast. A sprinkle of pumpkin pie spice or gingerbread spice also tastes great during the holidays.
  • Sugar: Regular white granulated sugar o caster sugar.
  • Black salt: I only use it to add the “eggy” taste to the custard. You can omit it or substitute it for regular salt.
  • Nutritional yeast: In this recipe, the nutritional yeast will add a rich touch of flavor. If not available, you can substitute for 1 more tablespoon of cornstarch.
  • Vanilla Extract: For optimal flavor, reach for pure vanilla instead of imitation. Even better, try homemade vanilla extract!
  • Butter — The butter is used to fry the french toast. This gives it a crisp exterior, as well as a rich, buttery flavor. You can use salted or unsalted butter.
  • Bread — The perfect French toast really starts with the bread. I like to use a thick and soft variety such as eggless brioche because it gets extra crispy on the outsides while remaining tender and flavorful inside. You can use sandwich bread, but you won’t get the same flavor. Thick slices work best.
  • For serving: Confectioner’s sugar, pure maple syrup, and/or fresh berries.

1 – Make the Mixture

Mix milk, cornstarch, cinnamon, sugar, black salt, nutritional yeast, and vanilla in a shallow baking dish.

Dip bread in egg mixture, turning to coat both sides evenly.

3 – Fry the Bread

Heat 2 tablespoons butter in a skillet over medium heat. Fry the bread slices until golden brown, 3 – 4 minutes per side. Wipe skillet, and repeat with remaining butter, and bread.

Pro Tip: If you’re making breakfast for a crowd and have to make multiple batches of French toast, keep them warm in the oven. Simply preheat the oven to 250º F. Then, place a wired rack on a baking sheet and place the fried French toast on the rack; place it in the oven while cooking the remaining bread. It keeps the bread warm and crispy, without drying it out.

4 – Serve and Add Toppings

Dust with confectioner’s sugar, if desired, and serve warm with pure maple syrup and fresh berries.

  • Vegan: Use plant-based milk, such as almond, coconut, etc., and vegan butter.

What Is Black Salt Or Kala Namak?

Black salt or Kala namak is a type of rock salt, a salty and pungent-smelling condiment used in South Asia. Although it is called black salt, its color is not black; it has a purple-ish to pink-ish color. Due to its sulfur content, it tastes and smells like hard-boiled egg yolks. This salt is used in many vegan/eggless recipes to mimic the flavor of the eggs. Keep in mind, Black salt or Kala namak is salt, so use it in moderation. I only use it to add the “eggy” taste to some eggless recipes, not as a salt substitute.

What Is Nutritional Yeast?

Nutritional yeast is a deactivated yeast that comes in flakes or as a yellow powder and can be found in most natural food stores. Due to its strong flavor, which is described as nutty, cheesy, or creamy, the nutritional yeast has often been used as an ingredient in cheese substitutes. In addition, it is often used by vegans in place of cheese.

Storing & Freezing Instructions

I love making extra of this eggless French toast so I can enjoy it throughout the week! Here’s how to store it.

Leftovers

Since this recipe does not have eggs, they last a little more than the traditional egg version.  To store French toast, let them cool completely, then wrap them with aluminum foil to keep moisture. Refrigerate for up to 3 days or freeze for 2 months.

Make and fry the egg-free French toast as directed in the recipe. Let them cool completely. Wrap fried toasts with aluminum foil and refrigerate for up to 3 days. When ready to serve, preheat the oven to 350º F.  Place a wire rack on a baking sheet and place the French toast on the rack; bake for 10 -15 minutes, until heated through.

Freezer

To freeze French toast let them cool completely, then wrap them with aluminum foil to keep moisture. I like to wrap them individually so I can pull out just what I want to reheat at a time. Transfer wrapped toasts to a resealable freezer bag. Freeze for 2 months.

Reheating

Frozen French toast can be reheated directly from the freezer. OVEN: Preheat oven to 350°F. Place a wire rack on a baking sheet and place the frozen French toast on the rack; place in the oven and bake for 10 – 15 minutes, flipping once about halfway through baking. MICROWAVE: Reheat the French toast for 2 minutes on high, but they will not be as crisp coming out of the microwave as they would from the oven.

  • 1 cup (240 ml) milk (240 ml) (I use whole milk)
  • 1/3 cup (50 g) cornstarch
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 3 tablespoons (36 g) granulated sugar
  • ¼ teaspoon black salt (see notes for substitute)
  • 1 tablespoon nutritional yeast (see notes for substitute)
  • 2 teaspoons pure vanilla extract
  • 4 – 6 tablespoons (56 – 84 g) unsalted butter
  • 6 slices eggless bread (thick slices, approx.1-inch)
  • Confectioner’s sugar (powdered sugar), for dusting (optional)
  • Pure maple syrup, for serving (optional)
  • Fresh berries, for serving (optional)

Instructions

  • Melt 2 tablespoons butter in a skillet over medium heat. Shake off the excess of the dipping mixture from the bread and place the bread slices onto the hot skillet. Fry the bread slices until golden brown, 3 – 4 minutes per side. Wipe skillet, and repeat with remaining butter, and bread.
  • Dust with confectioner’s sugar, if desired, and serve warm with pure maple syrup and fresh berries.

    Amazing recipe, thank you! My kids loved it, especially my daughter who doesn’t have an egg allergy – she didn’t even want any toppings she said it tasted so good! I think the cinnamon and nutmeg made it. We used soy milk instead as my other daughter also has a dairy allergy. I found the mixture amount was perfect for 6 pieces. So happy I can reintroduce French toast back into the family breakfast menu, thanks again!

    My parents went eggless over 30 years ago & never had French toast since then unfortunately, prior to that it would be a regular weekend breakfast! My mother always made savoury French toast, her additions to the egg mix would be small amount of milk to emulsify, garam masala, chilli powder, chopped fresh coriander & finally chopped onion. She would serve the French toast with what we call masala beans which is baked beans with the same spice/herb additions as the French toast mix to make them yummy & spicy; with the chilli powder replaced with a chopped green chilli. It tasted amazing & next time I go home to my parents or if they visit me (we live in different countries, not very often) I will surprise them with your recipe but turn them into savoury French toast for them. Thank you so much for sharing, can’t wait to try them both sweet & savoury style😋😋

    Ran out of eggs today and googled if it’s required to have eggs for French toast lol. Found this recipe and all I had was cornstarch. I actually preferred this to French toast with eggs. I’ll have to get the nutritional yeast and see if that’s even better. But thanks for saving our breakfast today! I now know eggs aren’t needed and it tastes better.

    Never commented on a recipe post in my life, but this was GREAT. I’m egg-free gluten-free and dairy-free, so used subs on all. (And left out the nutmeg, personal preference). I also subbed in arrowroot powder for the cornstarch, 1:1.

    My food problems are all adult-onset, and this was one of the first times I’ve found a free-of recipe that I thought tasted considerably BETTER than the “normal” versions I’d eaten my entire life. I’d proudly serve these at any group event. Thanks!

    One thing I didn’t understand — why the recipe calls for only 6 pieces of bread. I used it to make 12 or so pieces, and still had maybe 1/3 to 1/2 cup of the dipping liquid leftover. Maybe the arrowroot powder didn’t thicken it as much as cornstarch would have, or maybe the store-bought GF bread I used (which were large for GF bread and equivalent to large normal loaf slices) didn’t sop up as much liquid.

    Either way, the French toast turned out lovely, with a nice crust out the outside like you’d expect it to have, so I won’t complain. 🙂

    I made this for my husband and he loved it. Besides tasting great, it smells wonderful. The only change I made to the recipe was I used butter instead of oil to cook the french toast in.

  7. I tried to make this French toast but it doesn’t get cooked properly from the inside. Even if the toast is golden brown from the outside, it is mushy and uncooked from the inside. Do you know how I can resolve this issue? Other than that, your recipe is delicious and I can’t wait to try it when the bread is properly cooked.

    Um, your web site and this french toast recipe are amazing. Thank you for posting your journey and story because your web site looks so good and professional that, upon seeing sponsored content, I wondered if you were real. The french toast was super delicious! Spouse eats animal-based and I eat plant-based food. I used plant-based milk and skipped the cinnamon and nutmeg per spouse pref on the first slice. He smelled “egg” batter (thanks to black salt) and saw me put his butter in pan. He loved it! I added one teaspoon of ground golden flax seed to give batter that slightly gelatinous consistency and added a few shakes of cinnamon and nutmeg to disguise any visible flax specks. Spouse loved it, enjoyed the hint of cinnamon-nutmeg, and so did I.

    Yaaass! First of all I’m allergic to eggs. So it’s Mother’s Day. DH decides he wants to make me stuffed French toast and he’s looking up a recipe. He goes “find me a recipe with no egg”. This one instantly came to mind, I know I can trust your recipes! I told him how to make it and it was amazing!
