  • ½ cup (120 ml) evaporated milk
  • 1 teaspoon (5 ml) pure vanilla extract
  • 6 tablespoons (84 g) unsalted butter, cubed and softened
  • 2 tablespoons (28 g) unsalted butter, melted (for brushing after baking)

Cinnamon Filling:

  • 1/2 cup (100 g) brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1/4 cup (35 g) all-purpose flour
  • 2 tablespoons (15 g) ground cinnamon
  • 1/4 cup (56 g) butter, melted

Eggless “Egg” Wash:

  • 1 tablespoon (15 ml) evaporated milk
  • 1 tablespoon (15 ml) maple syrup

Frosting:

  • 1 cup (120 g) powdered sugar
  • 2 tablespoons (30 ml) milk
  • 1 tablespoon (14 g) salted butter, melted
  • 1 teaspoon (5 ml) lemon juice
  • 1 teaspoon (5 ml) pure vanilla extract

  • Purple green, and gold sanding sugar

Instructions
 

Make the Bread Dough:

  • In the bowl of a stand mixer, mix the flour, sugar, yeast, and salt until combined.
  • In a separate bowl, mix the whole milk, evaporated milk, and vanilla. Microwave for about 1 minute until lukewarm, around 100°F (38°C). This step is essential to activate the yeast.
  • Add the warm milk mixture to the flour mixture. Using the dough hook, beat on low speed for 2 to 3 minutes until combined, scraping down the sides of the bowl as needed. Increase the mixer speed to medium and continue kneading for about 3 more minutes, until the dough begins to come together.
  • With the mixer running, add the softened butter one tablespoon at a time, allowing each piece to fully incorporate before adding the next. The dough will be sticky at this stage; scrape the bowl as needed to ensure even mixing.
  • Continue mixing for 10 to 15 minutes, or until the dough is smooth, velvety, and elastic, and passes the windowpane test. Proper kneading is key to achieving a light and fluffy bread.

  • Shape the dough into a ball and place it in a lightly greased bowl. Cover and let rise in a warm place for 1½ to 2 hours, or until doubled in size.
