This is my favorite way to beat the Summer heat!! A big cup of freshly brewed espresso with ice cream. Oh yeah… the ice cream melts and sweetens the coffee. Perfection!!!
Let’s be honest… this overly tired but very contented mama needs coffee! But as much as I love hot coffee, it gets to be too much in the summer, with the sun beating down with temperatures in the 90s. So I have the recipe for you if you’re nodding your head vigorously and sighing sympathetically as you read this.
Meet my Caramel Coffee Float!! ↓↓↓
If you want a fancier name, you can call it Caramel Affogato. Either way, this is quite genius; instead of using sugar and regular milk, half and half, or cream in your coffee, you use ice cream. The result is a rich, creamy, and delicious cup of caffeinated bliss.
This time I used Blue Bunny® Salted Caramel Craze Ice Cream, which is sea salt caramel ice cream with sea salt caramel swirls and chocolaty sea salt caramel bunnies. I love the Blue Bunny new logo and clear packaging (you can see the goodness inside).
You could spike it with a shot of booze, like Amaretto or Frangelico. But since I used to drink it at mid-day, I added a little of caramel syrup for an extra caramel dose {wink}.
This Caramel Coffee Float is so easy to make it’s barely a recipe! It’s great for entertaining since it makes the perfect after-dinner alternative to coffee and dessert! This simple treat is a delicious way to impress your dinner guests.

Caramel Coffee Float
Ingredients
- Smucker’s Sundae Syrup Caramel Flavored Syrup
- 2 scoops Blue Bunny® Salted Caramel Craze Ice Cream
- 1/4 – 1/2 cup espresso
- Whipped cream for garnish (optional)
- Hazelnuts Pecan, or Walnuts, chopped, for garnish (optional)

Instructions
- Drizzle caramel syrup in the coffee cups.
- Place 2 scoops of ice cream in a coffee cup, then pour in the espresso.
- Top with whipped cream, chopped nuts, and more caramel syrup.
- Serve immediately.

I noticed that you show both Magic Shell & syrup but don’t mention that your instructions. Do you prefer one of the other? I love Blue Bunny Ice Cream also. The hubs starting bringing it home over a year ago and it’s so good. If you haven’t tried the ‘Cherry Pickin’ Chocolate’ you should… delish! It used to be called ‘Bordeaux Cherry Chocolate Ice Cream’ but they changed the name recently.
Hi Joanne!! I used the regular caramel syrup to drizzle the cup and then used the Magic Shell on top. Both are good! Just depend of what texture you prefer. For this Coffee float I actually like the regular syrup better because it melts easily with all the other flavors. I’m taking note of your recommendation! I so love frozen coffee drinks but this looks deliciously yummy. Now how do i make the espresso. can i buy it already made. I guess U can tell I don’t know a whole lot about coffee 🙂
Hello Theresa!! You could use espresso instant coffee, which you just need to dilute in hot water. But if you’re a coffee lover I highly recommend to get a espresso maker. This is the one I use: http://amzn.to/2a4JOan
