I love this salad! This chickpeas salad recipe is from my mom. The first time she said she was going to prepare this new salad I did not feel very excited because I had never been a fan of chickpeas but after I tasted it has become one of my favorites.
When we are trying to lose weight is very important to find healthy, nutritious and flavorful choices. This is the case with chickpeas salad. Besides being a feast for your eyes chickpea salad is highly nutritious.
Chickpeas are a helpful source of zinc, folate and protein. They are also very high in dietary fiber. Chickpeas are low in fat. One hundred grams of mature boiled chickpeas contains 164 calories, 2.6 grams of fat (of which only 0.27 grams is saturated), 7.6 grams of dietary fiber and 8.9 grams of protein. Ingredients:
· 2 (12 ounces) can chickpeas (garbanzo beans), drained
· 1 small red onion finely chopped
· 1 small green bell pepper, finely chopped
· 1 cup Tomato, chopped
· 1 Avocado, chopped
· 1/2 cup sweet corn
· 1/2 cup finely chopped fresh cilantro
· 1/2 cup diced Monterey Jack cheese
Dressing:
· 1/2 cup olive oil
· 3 tablespoons fresh lemon juice
· 2 teaspoons white wine vinegar
· Splash of hot sauce – optional
· Salt and Pepper to taste
Directions:
Combine chickpeas with red onions, peppers, tomato, corn, cilantro, cheese and avocado in a medium bowl. Dress salad with vinegar, olive oil, lemon juice, hot sauce, salt and pepper. Taste and adjust seasoning. Serve 6.

Me gustan mucho los garbanzos y esta receta se ve buenisima. Tengo todos los ingredientes en la cocina, pero lo unico que tengo que esperar para hacerla es que se maduren un poco mas los aguacates. Ya te contare como me quedo.
