For the Peach Mixture:

  • 6 – 8 cups cut peaches, (peeled, stone removed, cut into eight wedges – see notes)
  • ¼ cup (50 g) granulated sugar
  • 2 teaspoons (30 ml) lemon juice
  • ¼ teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg (optional)
  • 2 tablespoon (20 g) cornstarch
  • 2 tablespoons (30 ml) water

For the Cobbler Topping:

  • 1 cup (140 g) all-porpuse flour
  • 1 teaspoon (4 g) baking powder
  • ¼ teaspoon (1 g) salt
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (115 g) butter, melted
  • 1 teaspoon (5 ml) pure vanilla extract
  • 3 tablespoons turbinado sugar (optional)
  • 1/3 cup salted caramel sauce (optional)

Instructions
 

  • Preheat oven to 400° F (200º C). Lightly grease a 9-inch cast iron skillet. You can also use 9×13-inch baking pan. Any 3-4-quart baking dish works.

Make the Cobbler Topping:

Peaches (Fresh / Frozen / Canned): Fresh peaches are best option for cobbler, however, you can also use unsweetened frozen peaches. If using frozen peaches, thaw, chop, and blot them dry before using. Canned peaches are not ideal because they’re already too soft and mushy, in my personal opinion, but you can use them too.
Storing: Any leftovers can be stored covered in the fridge for up to 5 days. They can then be reheated in the oven or microwave until warm.
