How to make sausage and veggies foil packets?
First, slice all the sausages and veggies.
Mix everything in a bowl and add seasoning. Toss until well combined.
Cut four sheets of foil, about 12-inches long. Divide the mixture into equal portions and add to the center of each foil in a single layer. Fold the sides of the foil, covering completely and sealing the packets closed. Place foil packets on the grill and cook until just cooked through, about 15 minutes, or until the veggies have reached desired tenderness. Serve immediately, garnished with chopped cilantro, if desired.
How to grill mangoes?
Heat the grill to medium-high. Slice the mangoes in 2 pieces from the pit. Score the flesh of the mangoes with a sharp knife in a square pattern, be careful not to cut into the skin. Brush the flesh with the oil and grill, cut-side down, until slightly charred, about 1-2 minutes.
Place grilled mangoes on a platter and immediately drizzle with the lime juice and sprinkle with the salt, and any other condiment you like, such as chili powder or chipotle pepper. Serve.
Happy Grilling!!!
