This Was Supposed to Be Easy. It Wasn’t.

I already had my eggless pound cake recipe in bundt form — tested, loved, reliable. So when I decided to create a loaf version, I thought this would be a quick afternoon project. Scale down the batter, swap the pan, done. I was wrong.
