Satisfy your cravings with this Farro Salad with Horseradish Dressing! A super versatile dish that is perfect as its own, or even as a pizza topping.
My spring has flown by!!! Geez. Summer is about to kick off with the Memorial Day weekend just days away. Next thing you know, it’ll be 4th of July. So before spring vanishes I decided to make a spring inspired salad. That ended up being a killer salad-and-pizza meal all in one.
I also made a tangy Horseradish dressing that worked out really well for this salad -pizza!!
My version starts with a frozen pizza. Yes, STORE BOUGHT. If you want to save some time this is a great way to do so. The best thing is that you only need to cook the pizza according to the package instructions and then topped it with this absolutely amazing and colorful salad, which you can put together in no time.
I ♡ throwing salad over my pizza. It’s a go to for me, and it never disappoints. Somehow it gives me the feeling that I’m balancing my meal a little.
You can add any other toppings to the pizza itself, before cooking. This time I used a DIGIORNO® Tomato Mozzarella with pesto, but you can buy your favorite flavor and adapt it in a million different ways.

- Horseradish Dressing:
- 3/4 cup Crème fraîche
- 1/4 cup champagne vinegar
- 1/4 cup Horseradish
- 1 tablespoon honey
- 1 tablespoon fresh dill 1 teaspoon if using dried
- Salt and pepper to taste
- 1 cup farro
- 1 tablespoon olive oil
- Salt and pepper to taste
- 3 cups baby herbs (I used baby arugula sunflower microgreen, and sweet pea shoots), micro
- 2 radish washed, trimmed and thinly sliced
- Edible flowers optional
- 1 DIGIORNO® pizza of your preference optional
Place all horseradish dressing ingredients in a bowl and whisk to combine. Set aside in the refrigerator.
Cook farro according with packet instructions and place in a bowl with olive oil, salt pepper, and 1/4 cup of horseradish dressing.
Add the baby herbs and radish. Toss to combine.
Transfer to a platter, sprinkle with flowers (if using) and extra olive oil.
Serve with the remaining horseradish dressing.
If you want to serve the salad over pizza: cook the pizza according with packet instructions. Remove the pizza from the oven, top with dressed salad, and drizzle with more dressing, if desired. Serve immediately.
You can prepare the Horseradish dressing ahead of time and keep it in the refrigerator.
Total time does not include the cooking time of the pizza.
You can substitute the champagne vinegar for white wine vinegar.
Crème fraîche is a relative of sour cream, but with a higher fat content and isn’t particularly acidic. It's great in sauces for vegetables salad dressings, soups, pastries, and to top fresh fruit.
