I eat these tacos a lot!! When I say a lot it is really a LOT!
I usually make the full recipe just for me. Then, I divide all ingredients in three equal portions and eat the same for three days in a row. Nop, I am not kidding! The main reason is that they are easy to make and yummy. I feel like I’m having the whole deal – my greens, veggies, protein, fat and carbs – in one delicious way. I know! many people do not like to eat leftovers but for me, it is a simple solution to my lack of time. Unfortunately, during weekdays I have not much time to cook. My life is so chaotic that, generally, I eat breakfast around 8 am and it is not until 3 or 4 pm that I find some time to eat lunch {no wonder why I’m overweight, right?}
Well… back to the taco business!
As I mentioned, they are very easy to prepare. What takes longer is to cut all ingredients but once that is done… it is a breeze!
The first thing you have to do is season the chicken. Then, in a skillet with a little bit of olive oil cook the vegetables and then the chicken. I prefer to cook them separately since I like the chicken well-done and the vegetables crunchy. If I cook everything together (at the end) the vegetables are too soft. But this is just a personal preference.
Next, all you have to do is assemble the tacos with the rest of the ingredients.
Other thing I really like about this recipe is that it is a slightly healthier version of regular tacos. Here I use corn tortillas, first because I like them better and second because they are the slimmer pick, calorie-wise. Maybe, I like them better because they have less calories… who knows!! But you can use whatever you like even pita or naan bread.
The Greek yogurt sauce is great addition to this recipe. I am addicted to sour cream but this yogurt version does the trick for me. It’s a great way to skip the fatty sour cream without sacrificing taste or texture. At home everyone loves it. My kids eat it with potatoes, chicken, chips, etc… So, I usually prepare it on Mondays and lasts all week in the refrigerator.

Greek Chicken Tacos
Ingredients
- 4 chicken breasts boneless and cut into strips
- 1 1/2 tablespoon of salt
- 2 teaspoon of black pepper
- 1 1/2 tablespoon of garlic minced
- 2 tablespoon of lime juice
- 2 tablespoon of olive oil
- 1 green pepper cut into strips
- 1 yellow onion cut into julienne strips
- 8 corn tortillas
- 2 cups of baby spinach
- 1 cup of greek yogurt sauce Tzatziki
- 1 cup of tomato cut into small cubes
- 1 cup of cucumber cut into small cubes
- 1 cup of jalapeño pepper seedless and cut into small cubes (optional)
- 1 cup of feta cheese crumble
- 1 avocado sliced
Instructions
- In large bowl, add the chicken, salt, pepper, garlic and lime juice. Mix and set aside.
- In a large skillet over medium high heat add the olive oil. When hot, add the onion and peppers and saute for 5 minutes or until the onion is translucent. Transfer to a bowl and reserve. Do not over cook because we want them crispy to add more texture to our dish.
- In same skillet cook the chicken for 4 to 5 minutes per side or until no pink remains and lightly browned. When the chicken is fully cooked add the onion and pepper mixture; cook for 2 more minutes. Turn off the heat and reserve.
- Wrap tortillas in damp paper towel and warm up in the microwave for 1 minute.
- Assemble the tacos:Take a corn tortilla. Placed in the center a layer of spinach, yogurt sauce to your liking, chicken mixture, tomato, cucumber, jalapeño, feta cheese and avocado. Repeat the same procedure with the remaining tortillas.
