Stir in the remaining blueberries. The sauce should be syrupy. Remove from stove and cool. The sauce will thicken more as it cools.

Once cool, stir. If necessary, adjust the thickness by adding 1 teaspoon of water at a time to achieve the perfect “oozing” consistency; be careful; don’t make it runny!

  • 12 oz (290 g) blueberries (1 pint – about 2 cups)
  • 2 tablespoons (30 ml) lemon juice
  • 1/2 cup (100 g) granulted sugar
  • 1/2 teaspoon pure vanilla extract (optional)
  • 1 1/2 teaspoons (4.5 g) cornstarch
  • 2 tablespoons (30 ml) water

  • Place 1 cup of blueberries (145 g), lemon juice, sugar and vanilla (if using), in a saucepan over medium heat. Stir then bring to simmer. Reduce heat to medium low and simmer for 7 – 8 minutes until blueberries start to break apart.
  • Mix cornstarch and water, then stir in. It wil thicken quickly.
  • Stir in the remaining blueberries. Sauce should be syrupy. Remove from stove and cool. The sauce will thicken more as it cools.
  • Once cool, stir. If necessary, adjust thickness adding 1 teaspoon of water at a time to make it the perfect "oozing" consistency; be careful, don't make it runny!
