I get it… not everyone loves to bake from scratch as much as I do. So, you need to bookmark this recipe for all of you who prefer to make a cake in the easiest and fastest way possible.
There is something about boxed cakes that I can’t explain! They are delicious and super moist, and most important, they are pure convenience. They help us cut down on prep time, no measuring, no sifting, which means that you’re already much closer to enjoying a slice of that cake of your dreams.
So, If I’m sincere, although I prefer to make cakes from scratch now, I still have a soft spot for boxed cakes.
Cake mixes are a reliable kitchen shortcut when you have to bake many cakes for a special event or when you are not in the mood to measure or sift ingredients.

Ingredients Notes & Substitutions
FLOUR: Since I’m not using eggs, I like to add 1/4 cup of all-purpose flour to add more structure to the cake. After a lot of testing, I found out that when I don’t add the flour, the cake is too fluffy and difficult to frost/decorate. So, adding the flour is totally optional but highly recommended.
CAKE MIX: There are a wide variety of cake box mixes. I have tested this recipe with American cake mixes (around 450 g per box), such as Betty Crocker, Pillsbury, and Duncan Hines.
YOGURT: 1/4 cup (60 g) of plain regular yogurt is enough to substitute up to 3 eggs in a cake mix box.
My #1 Tip To Make A Cake Mix Box Without Eggs
I like to add 1/4 cup of all-purpose flour to improve the cake’s texture. After a lot of testing, I noticed that when I don’t add the flour, the cake is TOO fluffy and difficult to frost/decorate. So, adding the flour is totally optional but highly recommended.
How To Make A Cake Mix Box Without Eggs Step by Step

Step 1 – Preheat the oven to 350º F. Lightly grease and flour the cake pan(s). Alternatively, you spray it with baking spray.
Step 2 – In a large bowl, mix cake mix, water, oil, yogurt, and flour, if using, until everything is well combined, about 2 minutes.
Step 3 – Pour batter into the prepared pan.
Step 4 – Bake, as directed on the box, or until a toothpick inserted in the center, comes out clean. Cool for 10 minutes before unmolding. Cool completely before frosting.
Eggless Cake Success Tips
Measure the ingredients correctly. I highly recommend using a kitchen scale.
Preheat the oven for at least 15 minutes before getting started to give it plenty of time to reach the ideal recipe temperature.
Don’t overmix the batter. Instead, mix just until you’ve evenly distributed the ingredients throughout the batter.
Bake the batter as soon as it is ready.
Don’t open the oven door until your baked good has set. Leave the oven closed until the minimum time is stated in the recipe.
Every oven is different, so baking times always have to be taken with a grain of salt. Oven thermostats can be wildly off, affecting baking time, so keep an eye on yours.
Frosting Ideas
For a simple look, stick with vanilla buttercream or chocolate buttercream and, of course, lots of sprinkles! You can also try strawberry frosting, cream cheese frosting, or coconut frosting, it’s totally up to you!
How Many Cake Mixes Do I Need?
- One 8 or 9-inch round pan = 1 cake mix
- Two 8 or 9-inch round pans = 2 cake mixes
- One 13″ x 9″ pan = 1 cake mix
- Bundt pan = 2 cake mixes. Note: Only fill your pan about 2/3 of the way to avoid it from spilling out the top.
- 12 Cupcakes = 1 cake mix
Bake Time Suggestions
Every oven is different, so baking times always have to be taken with a grain of salt. Oven thermostats can be wildly off, and that will all affect baking time. The cake is ready when you insert a toothpick into the middle of the cake, and it comes out clean.
- Two 9″ round pans = 25-30 minutes
- One 13″ x 9″ pan = 28-35 minutes
- Bundt pan = 38-45 minutes
- Cupcakes = 12-18 minutes
Storing & Freezing Instructions
Store
To store the cake layers, let the cakes cool completely. Then, wrap them with plastic wrap and store them at room temperature for 2 – 3 days. For longer storage, cover the cake tightly and store it in the refrigerator for up to 5 days.
Freeze
To freeze the cake layers, let the cakes cool completely. Next, wrap with two layers of plastic wrap, followed by a layer of aluminum foil. Store it in the freezer for up to 3 months. Allow the cake to thaw in the plastic wrap and foil overnight in the refrigerator. Finally, bring it to room temperature before slicing and serving. Take into consideration that the cakes will lose part of their fluffiness if refrigerated or frozen.
Frequently Asked Questions
Replace up to 3 eggs with 1/4 of plain yogurt (total).
Yes, you can! To do so, substitute the three eggs called in the box for 1/4 cup of plain regular yogurt + 1/4 cup (35 g) all-purpose flour.
For a brownie mix, I recommend substituting 1 egg for 2 tablespoons of yogurt or buttermilk.

- ¼ cup (60 g) plain yogurt

Instructions
- Preheat oven to 350º F (180º C). Line an 8-in (20 cm) round cake pan with parchment paper. Lightly grease with baking spray with flour.
- In a large bowl, mix cake mix, water, oil, yogurt, and flour, if using, until everything is well combined. Do not overmix the batter.
- Pour batter into prepared pan.
- Bake, as directed on the box, or until a toothpick inserted in the center, comes out clean. Cool for 10 minutes before unmolding. Cool completely before frosting.

Hi Oriana, I read the other comments and decided to do the following for a Duncan chocolate cake mix: I added1/4cup regular yogurt, 1/2 cup flor and for water, I added 1/4cup water and 3/4 cup soy milk and 1/2 cup oil (as per box instructions). I did find the batter less pourable than I usually see, so I added 1/8 cup water more. I baked the 6 inch cake at 350F for a total of 32 min, checking from 26 min onwards. It came out great!! Next time, I will probably add another 1/8 cup water just to improve the batter consistency. Otherwise, all good! You saved me in a pinch, thank you! Did you use Greek yogourt? I used regular and it was ridiculously moist. Also, I made it for a cinnamon swirl cake, adding a layer of brown sugar and cinnamon in the middle. I don’t suggest doing a poke cake or cinnamon layer in the middle with this recipe, it’s just too moist for it. Not complaining, it was my fault, it still tasted amazing without eggs!!

I made your recipe with soy yogurt and 1/4 flour. It was perfect and delicious when it was first baked. The texture was amazing. That same evening it seemed dry, even though it had been well wrapped. The next day it was very dry, and the following day it was too dry to eat. I’m trying to make a wedding cake and need it to stay moist for a few days. A suggestions?
Also, when you increase the yogurt to 3/4 Cup for 4 eggs, do you increase the flour to 3/4 cup?

Hello Jennifer! I honestly don’t even know what could have gone wrong. I’ve never experienced this issue before. I’m wondering if maybe there was something off with one of the ingredients. I would recommend trying other types of yogurt to see if that makes a difference. I wouldn’t increase the flour because you will end up with a denser cake. It’s 1/4 cup of flour per box of cake mix. I’m sorry I can’t be of any more assistance. If you try it again I would love to know how they turn out. 🙂

Omg it worked. I used a small container (individual size) of vanilla yogurt. I did not have full fat yogurt at home. And I added 1/2 cup flour. It was delicious. I used milk instead of water. And baked it in an 8inch at 350 for around 45 mins. I used betty crocker devils food cake mix. We couldnt tell the difference.

It sounds like it was overbaked. Every oven is different so baking times always have to be taken with a grain of salt. Oven thermostats can be wildly off and that will all affect baking time. I would recommend using an oven thermometer to make sure it’s working properly. I also recommend you to read my Beginner’s Guide to Eggless Baking and my FAQs section. Just made this per recipe. Used funfetti cake mix. Did 3 6 in layers which took two boxes of cake mix (had extra). Forgot to add the additional flour on the second batch and the difference was notable. That layer was much less sturdy and a bit crumbly. I used as the middle layer in the cake. The rest of the cake held up beautifully to crumb coating and frosting. Thank you!!!!

Hello Sapna! Unfrosted cake can be frozen for up to 2 months. Make sure to wrap the cake tightly in several layers of plastic wrap to ensure it is tightly sealed. If you like, you can also add an extra layer of aluminum foil for extra protection against freezer burn. Thaw overnight in the refrigerator and bring to room temperature before decorating/serving. Indeed a recipe that makes things easier when one has limited time for cakes-from-scratch. I notice that the recipe does not specify any particular type of cake mix (like yellow cake mix or chocolate or pineapple or any other type/flavor). Tried your box cake recipe the cake using a 9″ square pan and the cake did turn out nice but it was still very soft and fluffy and easy to break type. Not sure if this was because of not using egg. I haven’t tried this yet, but am planning to. Your note says that for a two layer cake, you use two boxes. But the box says to divide the batter between two 9” round pans. Do you bake one box in one 9” round pan, in order to use one box per layer?

Thanks for the recipe- our daughter has an egg allergy and I have been looking for an easy, great tasting cake for family celebrations. When I made it (super moist white cake – Betty Crocker), it tasted great and was moist, but fell apart/crumbly… any thoughts? However, some readers had and what they do increase the oven temperature by 25º F and reduce the baking time by 5 minutes. I believe you have to adjust the liquid to depending on your attitude too. Hello Jamie! You made me laugh … LOL. Yes, you can use the yogurt for brownie mix too. My daughter loves crepes for breakfast. I make the crepes and then add some cheese and ham and fold it in half. My pancake and waffle recipes are not too sweets. You can also reduce the amount of sugar in the waffle recipe and add some shredded cheddar cheese for savory waffles. 1- the oven door has been opened before the cake has set,
2- the cake didn’t go in the oven as soon as the mixture was ready or
3- Incorrect oven temperature.
4- Incorrect pan size.
5- Underbaking the cake.

i love the fact that its not a lot of “extra, hard to find/weird ingredients” to make it egg-less, (yogurt and lil extra flour….. easy peasy :))

Hello Raksha! Oh…that is a shame. It’s impossible to say exactly because there are so many things that can make that happen. There could be several reasons that your cakes turn out dry and crumbly:
1 – Batter that is improperly mixed or undermixed can cause the cake to be crumbly. Careful mixing to evenly distribute the ingredients throughout the cake batter will give it a uniform consistency. Frequently use a plastic spatula to scrape down the sides of the bowl, and don’t forget to scrape the bottom of the bowl for any pockets of flour or other ingredients. However, be careful not to overmix once the flour is added, as this can cause the cake to be tough.
2 – Using a pan that is too big for the amount of batter you have can cause it to overbake and become dry. The pan should be filled from half to three-fourths full.
3 – Last but not least, every oven is different so I would recommend using an oven thermometer to make sure it’s working properly. If the oven temperature is too high, your cake could be dry. Check your cake for doneness at the lower end of the baking range.

I gave this recipe a try using both your suggestions of 1/4 cup yougurt and 1/4 cup all purpose flour along with the boxed cake mix from betty crocker n rest of the ingredients as per the box.. but once the cake baked and I let it cool for abt 30 mins before demolding it, but whn i tried slicing the cake it was too soft n just kept crumbling.. i just had to scoop it out with spoon.. i don’t know what went wrong please advice.

Hello Monica, So sorry to hear that. I have tested this method with Betty Crocker and Pillsbury cake mixes. Of course, It might have a different outcome with other brands depending on what ingredients are in the mix. However, here are a few tips:

I’m really happy I found this and regret not following your advice on the flour. After 30 mins of cooking I stuck a toothpick which came out clean so I took them out to cool. I tried your tips yesterday. Baked an orange box cake. The recipe asked for 6 eggs so even despite adding 1/4 cup of yoghurt, the batter looked like a cookie dough so i kept adding the yoghurt until it was quite runny (flowy) and 1/4 cup of flour. The cake tasted good but it was super moist. I bought a different brand of boxed cake which only requires 2 eggs. Will try and let you know.

I followed the instructions on the flour and added a pinch more of just in case it was too fluffy. I used plain yogurt and baked it the correct amount of time. However, it’s still too moist. How can I make it less moist? I’m in Phoenix, AZ therefore the air is dry.

Hi, this is Kay again. I didn’t hear back from you therefore following up. I also read on the cake mix that it had pudding in it, could that have made the cake too soft. Like I said earlier, I added everything you suggested and while the cake came out beautiful and delicious, I think it was too soft and some pieces fell apart. Please respond promptly and let me know what can be done to fix this problem.

Hello Kay! I apologize for my late response. What kind of cake mix are you using? If the cake comes out too fluffy I would add 1/4 cup more of flour to add a little structure. Having said that, the cake mixes I use (Betty Crocker and Pillsbury) do not have any pudding in it. I would recommend trying with another brand (without pudding) to see if it makes any difference in texture. Please let me know the outcome. Thanks for your interest in my recipe.?

I love your website! I’d really like to try this with sour cream (instead of yogurt) and butter (instead of oil). Gosh I’m picky 🙂 Any experience? I was thinking the same 1/4 cup sour cream but unclear on measuring the butter solid/melted. What i heard is that sour cream 1.5 tbsp to 1 egg.

Hello Maria! I usually add 1/4 cup of flour but it will depend on what kind of yogurt you use. If you notice that the batter is too liquid add 2 more tablespoons of flour. Make sure you measure the ingredients properly. Hope this help. Thanks for trying my recipe and leaving your feedback.

Hello Sindhu! I am sorry this recipe didn’t work for you. It sounds like the cake had too much liquid. Did you add the extra flour? I would recommend checking the weight of the cake mix you are using. Most American cake mix boxes have 432 gr – 15.25 oz. What cake mix brand did you use? Thanks for trying my recipe though.

Oriana, thank-you for this recipe. I have a few questions as I am hoping to use for a bday cake of a child with egg allergy. Most boxed mixes I have purchased (Betty Crocker, Duncan Hines) make 2 layers of a cake…so are you saying I need 2 mixes in lieu of one of those box mixes for a 2 layer cake? Also, have you tried your method on a 3D cake pan (i.e. Wilton Teddy Bear)?

Hello Sara! Yes, you need two boxes to make 2 layer cake. I have tried making two layers with one box and the layers are not thick enough. I haven’t tried to make this cake in a 3D pan, I think it would work fine if you grease and flour the cake pan very well. Hope this help. Thanks!
