Kale Kale Kale Kale!!
It seems that I cannot pass a day without hearing the k-word. Even my oldest daughter went to the grocery store a few days ago and came home with a bunch of baby kale…and she does not even cook!! Without a doubt, this leafy green is the rockstar of the produce section. It’s being discussed in daytime TV talk shows, magazines, blogs, etc…
So I decided to give it a chance. I started looking for information on the internet and found the fabulous benefits of this vegetable. According to what I read is packed with vitamins, minerals, and antioxidants and it is very low in calories {which is super}. My next step was to buy a cookbook about kale. I bought one that I found interesting and also with a name that stood out: Fifty Shades of Kale: 50 Fresh and Satisfying Recipes That Are Bound to Please. It sounds interesting, right?.
I wanted to start experimenting right away and Kale & Garlic Mayonnaise sounded perfect for dressing the burgers I had planned to prepare.
It’s quick and easy to prepare, and also an ideal way to incorporate this vegetable to your daily diet. You can use it on burgers, sandwiches and even as a dressing to traditional potato, tuna or chicken salad.

Kale & Garlic Mayo
Ingredients
- 1 1/2 cups of baby kale
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 2 cloves garlic chopped
- 2 tablespoon of olive oil
- 1 cup of mayonnaise
- 1 tablespoon of lime juice
- A dash of hot sauce optional
Instructions
- In a food processor or a blender combine kale, salt, pepper, garlic and olive oil. Process until everything is well mixed.
- Add the mayo, lime juice and hot sauce and process until smooth.
- Transfer it into a glass container. Cover and store in the fridge.

I don’t eat Kale often but when I have, I have enjoyed it. This is definitely a different way to use kale! I haven’t seen it before but I’m intrigued!
I’m so nervous to try kale, because I keep getting mixed reviews. I hear it is amazing and many of my friends religiously drink their kale shakes in the morning. And then I hear others say it is so thick, that you can get it really smooth and it have a very strong flavor. So i’m so nervous. This could be a great experiment to try out to let me get a taste for Kale without wasting an entire blender full of fruits and veggies blending in kale.
