Today, I woke up and it hit me… 3 days till vacation!!! Woot Woot.
I honestly don’t know how I’m going to work this week. Seriously! Every time, I attempt to finish some tasks suddenly I’m overcome with anxiety… Am I ready? Should I start to pack? Where are my email confirmations? … So to get those nerves out I cook.
The marinade is the secret of this succulent chicken. This gorgeous reddish marinade is super easy to make, just put all the ingredients in food processor and process. The chipotles in adobo add a smoky, tangy, and slightly sweet flavor to the marinade, which combines perfectly with the zest of the lime.
In case you are not familiar, Chipotles are dried, smoked jalapeños. And Adobo is a slightly sweet and tangy red sauce. You can buy Chipotles in adobo in most supermarkets, including Food Lion, in their international food aisle.
To complete the recipe I threw some tomatoes and jalapeños in the tray to roast along with the chicken. This is totally optional, but highly recommend.

- 1 whole chicken butterflied
- 4 – 6 whole jalapeñoS optional
- 8 whole wine tomatoes optional
- Lime Chipotle marinade:
- 1/4 cup chipotle in adobo
- 1/4 cup fresh lime juice 2 limes approx.
- 2 tablespoons lime zest
- 1 tomate chopped
- 1 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 tablespoon sugar
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
