Cinco de Mayo is right around the corner, and everyone is searching for the perfect crowd-pleasing- dish with a true Mexican flare to treat their families and friends. If this year, you’re among the millions celebrating Cinco de Mayo, you’re in luck! These Mexican Crispy Shrimp Bruschetta won’t let anyone down.
My last Cinco de Mayo celebration was kind of a nightmare. We went to eat out, and all the Mexican restaurants were packed. I’m pretty sure we waited for an hour for a table. And you know… that amount of time with two not-very-happy-and-hungry little ones is an eternity! Not to mention that my husband had his “I-told-you-so” look on his face.
So this year the Fiesta will be at home!!! And not Fiesta is complete without a mouth-watering, delicious, and jaw-dropping appetizer. Just like these ↓↓↓ Mexican Crispy Shrimp Bruschetta.
Don’t let the name of this Mexican appetizer scare you away! This is an appetizer that’s fancy but it’s a no-fuss kind of appetizer. They are so easy to make and oh so tasty!
To make this bruschetta, I used Italian Spicy Flatout Artisan Thin Pizza Crust instead of French baguettes. They turned out great! I loved the crispness and crunch of the Flatout crust added to this recipe. Plus, every flatbread variety is low in fat, a good source of fiber, and of course, perfect for wraps, pinwheels, and super easy pizzas or bruschetta {wink}.
These easy-breezy Mexican Crispy Shrimp Bruschettas are super quick to make!! The Flatout Artisan Thin Pizza Crust is pre-cooked, and not frozen, so it only took a couple of minutes in the oven before my bases for the bruschetta were done and golden. Find out where Flatout is sold near you here.
You can use either store-bought or homemade guacamole and salsa. This time I made my own guacamole because the one I use to buy at the store is kind of spicy for the kids. Plus, Guacamole is really quick and easy to make. All you really need is ripe avocados, lime juice, jalapeño, onion, and salt.
I bought the fresh salsa at the store. It’s one they called “farmers”, which has all the salsa ingredients, plus zucchini, yellow squash, and carrots.

Mexican Crispy Shrimp Bruschetta
Ingredients
- 3 tablespoons olive oil separated
- 1 garlic glove minced
- 3 Flatout Artisan Thin Pizza Crust I used Italian Spicy
- 12 large shrimp peeled and deveined
- Salt and black pepper to taste
- 1 1/2 cup guacamole
- 1 cup fresh salsa or more to taste

Instructions
- Preheat oven to 375º F.
- Mix in a small bowl 2 tablespoons olive oil with the minced garlic.
- Cut the Flatout pizza crusts into 4 equal pieces. Arrange the pizza crust pieces in a single layer on a baking sheet and brush them with olive oil and garlic mixture. Bake until light golden, about 2 -3 minutes. Let them cool.
- Toss shrimp with salt, pepper, and 1 tablespoon olive oil.
- Heat a grill pan to medium-high heat. Grill the shrimp for just 2- 3 minutes per side, or until opaque. Set aside.
- To assemble: Spread guacamole over the pieces of pizza crust and top with fresh salsa and one shrimp.
- Garnish with cilantro, if desired. Serve.
