Oozing thoughts: Why weekend never seems to be long enough? And then, why during the week never seems to come quick enough! Gah. I’ve always believed that if the weekend had three days, it would be the perfect amount. Anyway.
Okay… back to the recipe!
These potato skins are out of this world. You need these in your life. Loaded with a savory and full of flavor filling made with a combination of pork and chorizo, and then topped with Quesadilla cheese. They’re seriously hard to resist.
You cannot go wrong with potato skins!! Perfect appetizer for a party, light dinner or side dish! Plus, they’re very convenient when having guests because you can assemble ahead then just pop in the oven.

- 1 tablespoon vegetable oil
- 1/2 cup onion diced
- 1/2 cup green pepper diced
- 2 cloves garlic minced
- 1 pound ground pork
- 8 ounces fresh Cacique Pork Chorizo raw
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- Black pepper to taste
- 6 medium Russet potatoes scrubbed well, or any other baking
