I am always looking for new ways to incorporate more veggies to our diet, so when Qué Rica Vida asked me for a pumpkin recipe I immediately thought that I’d like to do something in the healthy side. As I have mentioned before, we have 2 extremely picky eaters at home. And even though, making a new dish does not mean that they going to eat it, at least I feel like I do my best. This time Matthew ate everything but the red pepper. Vicky only ate the cheese.
This delicious salad is a great option as an easy and quick dinner side dish. It would go perfect with grilled chicken or salmon. It’s full of color and taste. And the best part is that this tiny grain is packed with both protein and fiber so you’ll very satisfied.
