Miso Grilled Shrimp

Ingredients

  • 1/2 granny smith apple peeled and cut
  • 1 tablespoons sugar
  • 2 garlic gloves peeled
  • 1 fresno pepper see notes
  • 1 tablespoon Kikkoman soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons white miso paste see notes
  • 1 lb jumbo shrimp or tiger prawn
  • Mustard Soy Dipping Sauce:
  • 1 tablespoon Kikkoman soy sauce
  • 2 teaspoon apple cider vinegar
  • 1 teaspoon mustard

Instructions

  1. Put the apple, sugar, garlic, fresno pepper, soy sauce, sesame oil, apple cider vinegar, and miso paste in a small food processor and process until smooth.
  2. Place shrimp in a large bowl, pour the marinade over, and let marinate at room temperature for 20 minutes.
  3. Preheat a grill to high.
  4. Remove shrimp from the marinade. Thread shrimp onto skewers and grill for 2 - 3 minutes per side.
  5. Serve immediately with mustard soy dipping sauce.
  6. To make the mustard dipping sauce, place soy, vinegar, and mustard in a small bowl, whisk to combine.

Recipe Notes

Fresno peppers are hot so I decided to remove the seeds, but if you like spicy food you can use the whole pepper.

You can find white miso paste in most grocery store in the refrigerated section. I got mine at Whole Food.
