  • 1/2 cup onion diced
  • 1/2 cup green pepper diced
  • 2 cloves garlic minced
  • 1 pound ground pork
  • 8 ounces fresh Cacique Pork Chorizo raw
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • Black pepper to taste
  • 6 medium Russet potatoes scrubbed well, or any other baking
  • 1 1/2 cup Cacique Queso Quesadilla shredded
