Ingredients

  • 17.6 oz (500 g) Plain Greek ( I use whole milk yogurt)
  • 1 Hot House (English) cucumber
  • 2 - 3 garlic gloves, minced
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon dill (dry or fresh)
  • 1 teaspoon kosher salt

Instructions

  • Grate the cucumber. NOTE: Some people like to squeeze the water out of the cucumber. I don't do that, and I don't find it necessary. However, you can do it if you prefer. To do so, grate the cucumber, place it in a clean kitchen cloth or a heavy napkin and then squeeze all the liquid out.
  • Mix the Greek yogurt, cucumber, garlic, olive oil, dill, and salt in a bowl until well combined. Taste and adjust to your liking; you can add more salt or garlic, if necessary.
  • Cover and chill for a couple of hours before serving.

Notes

STORE:  the Tzatziki sauce can be stored in the refrigerator for up to a week.

MAKE AHEAD: You can make tzatziki sauce ahead of time. Store it in the refrigerator in an airtight glass container. It is best to use it within 2 to 4 days.

CUCUMBER: Hot House cucumber is also known as English cucumber. They're the long ones that come individually wrapped.

EXTRA TIPS:
  • I recommend using a Microplane zester to grate the garlic.
  • For an extra thick sauce, I like to use whole milk Greek yogurt but can also use fat-free or low-fat if you prefer.
  • Refrigerate the sauce at least 2 hours before serving.
  • Adjust the quality of garlic according to your liking. I generally add two garlic cloves, which adds a nice garlicky flavor without being overwhelming.
