BEST Eggless French Toast

Learn how to make French toast without eggs! This easy French toast recipe produces the absolute BEST Eggless French Toast! They’re fluffy in the inside and lightly crisp and golden on the outside. Just Perfection!

  • Mix milk, cornstarch, cinnamon, sugar, black salt, nutritional yeast, and vanilla in a shallow baking dish.
  • Dip bread in milk mixture, turning to coat both sides evenly.
  • Melt 2 tablespoons butter in a skillet over medium heat. Shake off the excess of the dipping mixture from the bread and place the bread slices onto the hot skillet. Fry the bread slices until golden brown, 3 - 4 minutes per side. Wipe skillet, and repeat with remaining butter, and bread.
  • Dust with confectioner’s sugar, if desired, and serve warm with pure maple syrup and fresh berries.

Make-Ahead: Make and fried French toast as directed in the recipe. Let them cool completely. Wrap fried toasts with aluminum foil and refrigerate for up to 3 days. When ready to serve, preheat the oven to 350º F. Place a wire rack on a baking sheet and place the French toast on the rack; bake for 10 -15 minutes, until heated through.
Store: Since this recipe does not has eggs, they last a little more than the traditional egg version. To store French toast, let them cool completely, then wrap them with aluminum foil to keep moisture. Refrigerate for up to 3 days. 
Freeze: To freeze French toast, let them cool completely, then wrap them with aluminum foil to keep moisture. I like to wrap them individually so I can pull out just what I want to reheat at a time. Then, transfer wrapped toasts to a resealable freezer bag. Freeze for 2 months.
Reheat: Frozen French toast can be reheated directly from the freezer. OVEN: Preheat oven to 350°F. Place a wire rack on a baking sheet and place the frozen French toast on the rack; place in the oven and bake for 10 – 15 minutes, flipping once about halfway through baking. MICROWAVE: Reheat the French toast for 2 minutes on high, but they will not be as crisp coming out of the microwave as they would from the oven.
Milk: You can substitute regular milk for evaporated milk or half and half for extra richness.
Black salt: I only use it to add the "eggy" taste to the custard. You can omit it or substitute it for regular salt. 
Nutritional yeast: In this recipe, the nutritional yeast will add a rich touch of flavor. If not available, you can substitute for 1 more tablespoon of cornstarch. 
Bread: The perfect French toast really starts with the bread. I like to use a thick and soft variety such as my homemade eggless brioche because it gets extra crispy on the outsides while remaining tender and flavorful inside. If you don't have time to make your own egg-free brioche, this pre-sliced  Brioche Style Bread Loaf could be a good alternative. Other great options are Challah, Texas toast, and Croissant Toast Loaf, Whatever bread you're going to use, make sure it's egg-free.
Quick Tips:
  • Slightly stale bread is best for this egg-free French toast. If the bread is too fresh, then it will absorb too much custard and make the French toast soggy.

  • Give the mixture a stir in between dipping the bread. The cornstarch might settle on the bottom of stirring helps keep it well mixed.
  • Make sure your skillet is on medium heat and warm before putting the French toast in so you can get the exterior nicely golden. However, if the pan is too hot, you risk burning the bread.
