Wine Poached Berries with Mascarpone Cream

  • 1 cup Woodbridge Cabernet Merlot
  • 1/2 cup sugar
  • 4 cups mixed berries
  • Mascarpone Cream:
  • 1//2 cup heavy cream
  • 1/2 cup mascarpone cheese
  • 2 1/2 tablespoons honey


  • In a medium saucepan over medium heat, combine the wine, and sugar. Bring to a simmer. Add the berries and bring back to a simmer. Reduce the heat to low and simmer until the berries are just tender, about 5 - 8 minutes. Pour into another bowl so the berries don't overcook.
  • Whip the cream with a electric mixer in a cold bowl until fairly thick. Stop the mixer and add mascarpone cheese; continue whipping until thick and peaks form. Add honey and mix until incorporated.
  • Serve the warm berries and syrup in bowls or jars, topped with a large dollop of the mascarpone cream.
