Ingredients

For Two Cocktails:

  • 4 tablespoons (60 ml) fresh lime juice
  • 3 - 4 tablespoons (36 - 48 g) granulated sugar
  • 3 oz (89 ml) vodka (or more to taste)
  • 10 fresh raspberries (or more to taste)
  • 4 thin slices lime
  • 12 leaves of fresh mint (less or more to taste)
  • Ice
  • Soda water

For a Pitcher:

  • 1 cup (240 ml) fresh lime juice
  • 1 cup (200 g) granulated sugar
  • 2 cups (480 ml) vodka (or more to taste)
  • 12 oz (340 g) fresh raspberries (or more to taste)
  • 4 - 5 limes, quartered
  • 36 leaves of fresh mint (less or more to taste)
  • 2 - 3 cups Soda water
  • Ice

Instructions

Make Two Cocktails:

  • Place lime juice, sugar, vodka, raspberries, and lime slices into a pestle and crush until the sugar is dissolved. Add the mint leaves and bruise; just enough so they release their flavor. Let all the flavors blend for 5 minutes.
  • Divide the raspberry mixture into two glasses, add ice and top each with about 1/4 cup chilled soda water. Mix.
  • Garnish with more mint leaves and raspberries, if desired. Serve immediately.

Make a Pitcher:

  • Place lime juice, sugar, vodka, raspberries, and lime quarters into a bowl and crush until the sugar is dissolved. You can use a cocktail muddler a potato masher.
  • Add the mint leaves and bruise; just enough so they release their flavor. Let all the flavors blend for 5 minutes. Transfer the mixture to the pitcher.
  • When ready to serve, add the soda water and gently stir.
  • Pour into ice-filled glasses and garnish with fresh raspberries, lime slices, and mint leaves (if desired).

Notes

TIPS AND VARIATIONS:
  • If you don't have a mortar and pestle, place mint leaves in a small bowl and crush with the back of a spoon.
  • Mint leaves vary in size, and you can add less or more according to your personal taste.
  • I highly recommend using good-quality vodka. Citrus vodka is an excellent alternative to unflavored vodka.
  • You can substitute raspberries for strawberries, blueberries, or blackberries.
  • For a virgin mojito, skip the vodka and increase the mint and soda.
