Season the fish with salt, pepper, and garlic powder.
Place the buttermilk into a large container. Add the fish strips, stir to coat, and let stand for 15 minutes.
Preheat oven to 450º F.
In a medium bowl, stir together the Parmesan and bread crumbs. Set aside.
Remove the fish from the buttermilk. Roll them around in the bread crumb mixture to coat completely, pressing to adhere.
Place fish sticks in a single layer on a baking sheet cover with foil. Lightly drizzle with olive and bake for 15-20 minutes and until edges are slightly golden brown.
