Ingredients

Instructions

  • Cook noodles according to package directions. Drain; rinse with cold water; drain again. Set aside.
  • Preheat oven to 350º F.
  • Heat olive oil in a skillet over medium heat. Add turkey sausage roll; cook and crumble until no longer pink, about 3 – 5 minutes. Add onion, roasted peppers, garlic, and spinach; mix and cook for 2 minutes. Add heavy cream and butter; mix until incorporated. Add parmesan cheese and cream cheese; cook until well combined. Taste and add salt and/or black pepper to taste. Remove mixture from heat. Set aside.
  • Lightly coat a 13x9-inch baking dish with nonstick cooking spray.
  • Arrange 3 noodles in the bottom of the dish. Top with one-third sausage mixture and Italian blend cheese. Repeat layers twice. Cover; bake for 20 to 25 minutes, or until heated through. Uncover; sprinkle with mozzarella cheese. Broil, uncovered, 3 minutes or until cheese is melted.
  • Let stand 5 minutes before serving. Garnish with cherry tomatoes and basil, if desired. Serve.
