1cupbottled roasted red peppers,drained and chopped
1(10 oz) package frozen chopped spinach,thawed and well drained
2cupsshredded Italian blend cheese
1cupshredded mozzarella cheese
Cherry tomatoes,halved (optional)
Fresh Basil to garnish(optional)
Cook noodles according to package directions. Drain; rinse with cold water; drain again. Set aside.
Preheat oven to 350º F.
Heat olive oil in a skillet over medium heat. Add turkey sausage roll; cook and crumble until no longer pink, about 3 – 5 minutes. Add onion, roasted peppers, garlic, and spinach; mix and cook for 2 minutes. Add heavy cream and butter; mix until incorporated. Add parmesan cheese and cream cheese; cook until well combined. Taste and add salt and/or black pepper to taste. Remove mixture from heat. Set aside.
Lightly coat a 13x9-inch baking dish with nonstick cooking spray.
Arrange 3 noodles in the bottom of the dish. Top with one-third sausage mixture and Italian blend cheese. Repeat layers twice. Cover; bake for 20 to 25 minutes, or until heated through. Uncover; sprinkle with mozzarella cheese. Broil, uncovered, 3 minutes or until cheese is melted.
Let stand 5 minutes before serving. Garnish with cherry tomatoes and basil, if desired. Serve.
