Easy Buffalo Chicken Dip

This Buffalo Chicken Dip recipe is as easy to make as it is to eat! Simply stir up a base, top it with delicious chicken and seasonings, then bake it for your hungry crowd.

Ingredients

  • 8 oz (227 g) full-fat cream cheese , softened
  • 1/2 (120 g) cup sour cream
  • 1 cup shredded cooked chicken breast (or rotisserie chicken)
  • 1/2 cup (120 ml) Buffalo Wing Sauce
  • 1/2 cup (120 ml) ranch or blue cheese salad dressing
  • 1 cup (113 g) Colby & Monterey Jack cheese, shredded
  • 1 cup (113 g) cheddar cheese, shredded

Garnish (optional)

  • 1/4 cup crumbled blue cheese optional
  • 1 tablespoon green onions or chives, thinly sliced (optional)

Instructions

  • Pre-heat oven to 350º F (180º C). Arrange the oven rack in the middle of the oven.
  • In a small bowl, stir together the cream cheese and sour cream until smooth. Set aside.
  • Spread cream cheese mixture into an ungreased shallow 1-qt. baking dish. Then, layer with cooked chicken, wing sauce, and salad dressing. Sprinkle with cheese.
  • Bake, uncovered, until cheese is melted, 20-25 minutes.
  • Immediately garnish with blue cheese and green onions, if using. Serve with bread slices, celery ribs, or tortilla chips.

Notes

 
Store: The leftover dip may be covered in plastic wrap and refrigerated for 2 - 3 days. It will thicken as it cools but will soften and melt again once heated. Reheat smaller amounts in the microwave or use the oven for bigger portions.
Colby & Monterey jack cheese: I usually buy this cheese at my local Walmart. If you don't find it, you can use half Colby and half Monterey Jack.
Recipe Tips:
  • Stir the cream cheese and sour cream vigorously to get the smoothest result.
  • Bring all ingredients to room temperature before assembling.
  • It’s best to shred the cheese yourself; store-bought shredded cheese has a coating that means it doesn’t melt quite as well.
  • For an extra spicy dip, you can use more buffalo sauce or sprinkle in a bit of cayenne pepper. 
  • Make Ahead. Assemble the dip in the baking dish as instructed, then cover with plastic wrap and place it in the fridge. When you’re ready to bake and serve, remove the plastic and bake until melty!
