Coconut and Apricot Granola

  1. Preheat oven to 300º F. Line a baking sheet parchment paper. Set aside.
  2. In a large bowl combine all ingredients except apricots. Mix well.
  3. Transfer the mixture to the prepared baking sheet and spread out to form a uniform single layer.
  4. Bake for 30 minutes, stirring every 10 minutes, until evenly browned.
  5. Add the apricots and bake for 10 more minutes
  6. Remove from oven and allow to cool completely. Store in an airtight container
