I LOVE one-pot meals. They are so convenient, easy to make, and always delicious. One-Pot meals fascinate me in so many ways. First of all, the only thing I have to do is toss all ingredients in one pan and let them sizzle! And if that wasn’t enough, they require hardly any cleanup. It seriously doesn’t get any better than this.
As I mentioned before, alli® invited me to try some of their recipes. They have a very large variety to choose from, but when I saw Arroz con Pollo, I knew that the dish had to be on my list to try.
Arroz con Pollo is literally translated to Rice and Chicken in Spanish. This dish is very popular in Latin America. However, each country has its own variation. But In my opinion, no matter what or where … it’s always delicious!
alli® Arroz con Pollo recipe is super easy to make! It just has 7 ingredients, and it will be on the table in less than 30 minutes!! The chicken and rice are cooked together along with some onions, green pepper, peas, and spices to make an amazing meal – at only 233 calories per serving.
Easy Skinny Arroz con Pollo
Ingredients
- 1 cup long grain white rice uncooked
- 1 1/2 cups water
- 3/4 cup chicken cooked
- 1/2 cup green peas frozen
- 1/4 cup bell green pepper chopped
- 1/4 cup onion chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander

Instructions
- Place all ingredients into a rice cooker or covered medium saucepan and cook at medium low heat until done, about 25 minutes.
