
A few days ago, we celebrated Matthew’s 3rd birthday! I cannot believe my baby is so big now. But, indeed, time does not stop for anyone. That is why it is so important to enjoy every day, every step, and mischief.
My 3yo little guy is quite a character, very talkative. He likes to pay attention to detail. He LOVES reading books {well … I read, and he hears}. He loves anything with wheels; you name it, cars, trucks, airplanes, ambulances, garbage trucks, fire trucks, and so on. He adores his sisters, although they fight a lot. He also is very affectionate and loves going to school, his teachers, and his classmates. Also, he is finally sleeping in a “big boy” bed. And he is potty-trained {happy dance}.
He is ADORABLE! And I cannot imagine my life without him.
This was the first time we were throwing a big party for him. In previous years we only celebrated his birthdays at home with family. So this time we wanted to do something special for him, something that he would enjoy.
Our party theme was Lego! Matthew has loved Legos since I can remember. So we’re all about Lego. I was surprised I could find so many great Lego Party ideas out there on the web. From the beginning, I knew that I would enjoy organizing his party.
Note: Everything happened so fast that I couldn’t take good photos … so I apologize! (Lesson learned: Next time I decide to throw a big party, I will do it at home where I can go at my own pace)
Lego cake:
I am pleased about how the cake turned out. It just didn’t look beautiful but tasted amazing. So, I prepared my delicious, simple cake recipe and filled it with Nutella frosting. You can find the custom name Lego topper here.
Lego Jello:
They were a big hit with the little ones! They’re straightforward to make a super eye-catching. I used yellow, blue, and red jello to make this colorful treat.
Lego Cupcakes:
Egg-Free Chocolate Cupcakes with Nutella Frosting. After trying several egg-free chocolate cupcake recipes, I came up with my own. I am pretty happy with the results and will publish the recipe soon. You can find the Nutella Frosting Recipe at the end of this post.

Even though I wanted to do everything myself, I knew that was practically impossible, so I bought a few things, such as these beautiful cookies. You can find them here.

Nutella Frosting
Ingredients
- 1 cup unsalted butter, room temperature (2 sticks)
- 2 cups confectioners sugar, sifted
- 1 cup Nutella
- 1 teaspoon pure vanilla extract
- 1 pinch kosher salt
- 2 tablespoons heavy whipping cream

Instructions
- With an electric mixer on medium speed cream butter for 4 – 5 minutes until light and fluffy.
- Add the confectioner's sugar gradually, beating after each addition.
- Add the Nutella, beating until smooth.
- Beat in the vanilla extract, salt, and heavy whipping cream until desired spreading consistency is reached, about 2 minutes

I’m a huge fan of your eggless cupcakes and other buttercream recipes however it has been my first attempt at making your Nutella recipe and as soon as I added the heavy cream, the texture changed. It’s gone lumpy and oily looking, has anyone else had this issue? It could be the cream ?
Hello Allison, I am sorry this recipe didn’t work for you. It’s hard to say what went wrong without seeing you make the recipe. There a number of possibilities but it sounds to me like the ingredients weren’t at the right temperature, all the ingredients should ideally be at room temperature. Softened or room temperature butter is cooler than we think. The best way to check it is, when you press it, your finger will make an indent. If your finger sink down into the butter or slide all around it to hot. Hope that helps!
