This Eggless Confetti cake will light up any celebration. It’s quick and easy to make. Plus, you are never too old for sprinkles!
We made it to the end of another week! And we have some great news: Our youngest got rid of all the pacifiers!! Woo Hoo. We have been telling her for months that she would have to give the pacifier up on her third birthday because she was going to be a big girl. The day came and nothing happened because we were on vacation, but yesterday I took her to her pediatrician for a routine 3-year old check-up and the Dr. said: “No more chupon (paci), you’re a big girl now”. So we got home and she threw it in the trash [happy dance].
Such a courageous action requires a special celebration, right?
In her book, nothing says “Celebration” more than an Eggless Confetti Cake!
She loves sprinkles!! She would put sprinkles on everything if she could. I don’t blame her. After all, sprinkles make everything fun!
As you know my daughter is allergic to eggs. For that reason, I prefer to make all our food from scratch, but the other day I was at Target I saw this wonderful Pillsbury™ Purely Simple. I have to confess that it made me curious. So I decided to give a try because sometimes shortcuts in the kitchen are welcomed.
Pillsbury™ Purely Simple really stands by its name. No artificial colors, flavors, or preservatives.
Since Pillsbury™ Purely Simple mix cake calls for 3 eggs I had to adapt it. Many people use a can of soda to make cake mixes. I tried once and I didn’t like the result. It’s was way too sweet and airy. Plus, I don’t feel comfortable giving my kids sodas.
So after a few fails (3) I finally got an outcome that pleased me. I found out that the better way to substitute egg when using Pillsbury™ Purely Simple cake mix is a combination of aguafaba, vinegar, and baking powder. The magic happens when aguafaba acts as a binder, and then vinegar and baking power react creating puff.
This delicious Eggless Confetti Cake served its purpose… Our brave princess had a frosting mustache and sprinkles everywhere to prove it {wink}.

Eggless Confetti Cake
Ingredients
- 1 Pillsbury™ Purely Simple Cake Mix
- 3 teaspoons baking power
- 1/2 cup butter, at room temperature (I used unsalted)
- 5 tablespoons aguafaba (chickpea brine) (see notes)
- 1 cup milk
- 1 tablespoon apple cider vinegar
- 1/2 cup rainbow sprinkles and some more to decorate
- 1 – 2 Pillsbury™ Purely Simple Buttercream Frosting Mix (see notes)
Instructions
- Preheat oven to 350º F. Coat bottom and sides of a baking pan with non-stick baking spray, or butter and flour.
- In the bowl of the stand mixer fitted with the paddle attachment add the cake mix and baking powder; mix to combine. Add the butter and mix on medium speed until the butter is incorporated, about 2 -3 minutes. Add aguafaba and mix to incorporate, scraping bowl as needed. Add milk and vinegar, increase speed to medium high and continue mixing for 2 more minutes. Foil in the sprinkles. Transfer batter to prepared pan.
- Bake the cake following the box recommended bake times. I used a 9x9 square pan and I baked it for 30 minutes. When a toothpick inserted in the center comes out clean, the cake is done. Cool cake completely before frosting.
- Prepare frosting following package instructions. Spread frosting over the cake and decorate with more sprinkles.

Does it matter what kind of beans
Hello Jessica! I use chickpeas because the liquid is light in color and taste. You can also use 1/4 cup of Greek yogurt instead of the aquafaba. If you decided to used yogurt do not add vinegar.
Did you whip the aguafaba first before adding to the mix?
Hello Cyan – No, I didn’t! just add it as is and them whip it with the hand blender.
