We never have enough summer-snacking ideas, right?

I don’t know about your kids, but mine are always hungry!! With the hot weather, swimming, and other activities, they seem to always ask for snacks.

Of course, fresh fruit and vegetables are some of the best snacks, but sometimes, we need to get creative to make them exciting and fun. Especially if you have two picky eaters like me.

So, I decided to prepare a week’s worth of snacks on Sunday. That way, I can easily control what they eat and also have snacks on hand for the kids to grab when they need them.

This was my first time making banana pops, and they’re super easy to make! They’re perfect to have in your freezer for hot summer days when everyone’s craving something cold, delicious, and refreshing.

I coated my bananas with white and dark chocolate and a variety of toppings: crushed Shredded Wheat Frosted Mixed Berry, sprinkles, nuts, and coconut flakes. My kid’s favorite variation was the one covered with crushed cereal since the cereal adds a little crunch. Easy Frozen Banana Pops

Servings 10 banana pops

Ingredients
 

  • 5 large bananas
  • 10 wooden sticks
  • 10 -12 oz chocolate, coarsely chopped (white or dark) (I used both, 6 oz each)
  • 2 teaspoons coconut oil

Toppings:

  • 2 cups Shredded Wheat Frosted Mixed Berry, crushed
  • Pecans and walnuts, chopped
  • Sprinkles
  • Coconut flakes

Instructions
 

  • Line a baking sheet with parchment paper and set aside.
  • Peel the bananas, and slice them in half. Gently insert a stick through the cut end of each banana. Freeze 15 minutes.
  • Melt the chocolate with the coconut oil in a microwave-safe container. Set intervals of 30 sec at 50% power, until melt smooth. You can also melt the chocolate in a heatproof bowl set over (not in) a pan of gently simmering water.
  • Dip banana, one piece at a time, in the melted chocolate, spooning on additional chocolate to cover.
  • Sprinkle each banana with crushed Shredded Wheat Frosted Mixed Berry, or any other topping of your choice. Let stand until chocolate is firm.
  • If not serving immediately, store them in an airtight container or zip-top plastic bag in the freezer, for up to 2 weeks.
Oriana’s Notes
If you are serving them straight from the freezer, allow them to sit at room temperature for 10 minutes before eating for better texture.
